The former Four Pines head brewer is the son of David Ellis, head brewer of Bos Brewery in Tea Tree, a few kilometres from me.The 4 Pines Brewery in Sydney were taken over by Asahi a while back, something that seems to be happening to a lot of craft breweries. Anyway I see they now they do this Japanese style lager. I bought a 6 pack the other day and because it's been quite warm in Brisbane I didn't need much encouragement to get into it....
Have to say that it's a very good drop and I shall be back for more!
David has learned a lot from his son. He brews superb Stouts and Porters, sometimes whisky barrel aged. I don’t like the taste of whisky, so just a subtle taste of it in dark beers is more appealing than a modicum of a whisky flavour in beer.
David has given me a lot of free samples, but I insist on paying for them.
He has also brewed a pale ale with a lot of fruitiness, but eased back on hops. Very little bitterness in the finish. I like it!
